Mac Mail - contacts and multiple devices

I have a couple of problems.

1. Why does my Mac insist on creating emails and putting them in the 'contact's file? - this is an example of what it puts in to the contact file (I have replaced a few of the letters and numbers in the UID section JIC of privacy.

2. I have several devices and know that the files created are for different ones in the mail program - but how do I change it so that all the 'sent' emails for ALL of the devices go into the same file
