iPad/iPhone Clean Install

I don't know how many have actually done a clean install on their iPad or iPhone. All I've ever done is updating as new IOS' come out. I think I did one Restore on my iPhone. After doing a Clean Install on my MBP with Mavericks, I thought, why not with Apple's devices? Is there one way better over the other for doing such a procedure? I have plenty of apps I probably don't want to add back on. So, I don't want to just do a Reset-Restore. How does one Reset and then add apps and data back one at a time?
